A simple recipe that doesn't bother with separating eggs and produces waffles the kids will eat.Ingredients
- 1 Cup flour
- 1 tsp Baking powder (maybe a bit less)
- 1 tblsp Cornflour
- 15mm Off the end of a block of butter
- 20ml Peanut oil (approx)
- 1 tsp Real vanilla essence
- 2 Eggs
- 1/3 tsp Cinnamon
- 2 tbsp Brown sugar
- Pinch salt
- A cup or two of milk and/or yoghurt - it depends on the eggs & flour.
First, warm up yer waffling iron.
Melt the butter; a microwave is fine. Just don't make it sizzling hot. Top it up to
100ml with peanut oil. Reduce the butter/oil slightly if doubling up the recipe.
Put all the dry ingredients in a foody processor or Kenwood Chef bowl. Mix up with a spoon.
Add the 2 eggs & vanilla essence. Mechanically mix a bit. Add milk and mix well until it's sloppy enough to just flow over the iron when poured.
Use 1/3 cup mix per square waffle or 3/4 cup mix per 6" waffle in the hot, greased waffle iron and do whatever you do with it until the waffles are golden brown - the
steam stops whistling out around then. I use a Breville Waffle Supreme electric iron set on 9. This mix makes 5 waffles about 6" across.
Eat, bloat, and rest a while.
